“Keep it healthy, keep it simple, and have fun!” This formula guides Cottonwood Tucson’s Executive Chef Richard Serna and we would like you to meet Executive Chef Richard Serna up close and personal. We are honored that Shamrock Foods Company chose to feature Chef Serna in their November-December 2010 edition of Smart Solutions magazine.

Food to Heal By* not only tells the story of Executive Chef Richard Serna and his culinary team, it also offers a clear perspective of what our Cottonwood staff learned a long time ago: “Good nutrition is an important, though often overlooked, component of a healthy recovery from addictions and mood disorders.”

Keeping pace with Chef Richard and his culinary creations is fun for both our patients, their families and our staff. And teaching and learning about nutrition does not stop at Cottonwood, Chef Richard makes it a point to reach out to the local community. In the past few months you would have found Chef Richard participating at:

  • The Ronald McDonald House 8th Annual Charity Event on September 24, 2010
  • Taste of the Season Best Chefs in the West at the Renaissance Glendale Hotel and Spa October 11, 2010
  • Healthiest Town in America Expo, collaborating with Canyon del Oro High School’s culinary program October 23, 2010
We hope you will read Food to Heal By. Check out Chef Richard’s recipe for Duet of Beet and Spinach Israeli Couscous with 5 Spice Turkey Medallions and Leek Consomme.
Let us know how this recipe worked for you. Most importantly, did you have fun?
